In the heart of the city, there is a new gastronomic space that offers a gastronomic journey with a taste of France. At Bar a Moules – Chez Nando, the menu only has mussel-based dishes, made with four different sauces.
The space opened its doors at Avenida Luísa Todi, 330, on June 1, 2022 by the hand of Fernando Guerreiro, 54 years old. Born in the municipality of Santiago do Cacém, he soon moved to France, where he trained in the kitchen area, and later went to São Martinho Island, in the Caribbean.
After 38 years, always working in catering, essentially with the famous moules, that is, mussels, cooked with various types of sauces, he returned to Portugal about two years ago.
He settled in Setúbal and began to idealize a space that would have “only mussels on the menu, to make this product known to the Portuguese”.
At Bar a Moules – Chez Nando, mussels, made with four different sauces, are the main course and can be served with fries without oil or with bread.
Moules au chorizo, by Fernando Guerreiro, is a meeting between Portugal and France, with mussels combined with Alentejo chorizo, cooked with olive oil, tomato, garlic, onion and white wine.
The other three sauces on the menu are the best known in Belgium and France. Moules a mariniére, with butter, onion, white wine, parsley and celery, is the simplest, ideal for those who are just starting out in these flavors. There are also moules a la crème, with crème fraiche, onion, white wine and parsley, and au roquefort, with onion, white wine, roquefort cheese, crème fraiche and celery.
To drink, chef Nando's suggestion is white wine from the Setúbal region or beer.
The decor refers to the calm and relaxed atmosphere of the Caribbean and helps to tell a little bit about the history of Fernando Guerreiro.
The mussels are served in traditional Portuguese clay pots produced in Setúbal, at Olaria Nova.
Moules dishes vary between nine and ten euros. The bread to go with it is 1,20 euros and two euros are charged for a portion of fries.
